What are a few ways to know if my 97 Ford Mustang has a blown head?

It should be pretty obvious…

Use a compression tester and test the pressure of each cylinder. Look for grey oil. If the head gasket is blown, you will have oil mixing with water - it will be grey. You will also have white smoke coming out the exhaust, from the water getting into the cylinders. Really, not much you can miss.

Oh, one more thing - it probably won't run… For very long.

Water in the oil, oil in the water, water coming out exhaust pipe, engine running like poop, its been extremely overheated lately and now running rough… Etc etc.

If you think it might have a blown head gasket, you should not drive it, but have it towed and worked on immediately. Oil in the antifreeze (may look milky). Water/coolant in the oil, white smoke in the engine or exhaust.
