So, would the value of the NSX be worth buying and fixing up? And which, if any, muscle car is the top of your list and why?

Acura NSX isn't a luxury car, every car you listed are muscle/sports cars. All the cars on your list would be hard to find, mostly that roadrunner. Any car on your list will cost a ton to restore…

All of these cars are a no go unless you have loads of money to spend on maintenance and all the cars on the list are unsuitable for daily driving. The vast majority of 15 year olds don't have $20000-$50000 in savings to spend on a project car.
