If you want to repower your mid 1970's F-250 the triton family of engines would work as if you want to take the diesel route the 7.3 diesel or the powerstroke family of engines would work as a swap.
351W is the simple answer, it is most likely to fit without much work, and makes good power. A 302 might even be easier, and would get around OK. Do you want fuel injection? What engine is in there now?
If you want anything else, consider dropping your body on a more modern frame so you can have a whole newer truck under your box and cab.

for a 250 forget a small block the reason its like trying to make the fat kid run a marathon. Too asthmatic. There's a lot of weight for a sbf to pull around
That depends on the original engine size. Nothing modern in a small block will work, the bellhousing changed with the 4.6. Some look similar though. If you had a bbf, then there's the 460, or crate engines. Your best bet is a donor from the 90's.
even the new 5.0 is not a sbf(windsor)
Most anything Ford has or is making will sit in there just fine. Anything from a big block 460 to a stump-pulling diesel 7.3 to a more efficient small block… Name it & it will work…
