That galaxy will be hard to find parts for. There are basically one or 2 vendors for ford, and they are quite expensive!
Restoration is always an open-ended thing. If it is already roadworthy you could go for as little as a couple thousand dollars for upholstery, add another few thousand for paint, and from there the sky is the limit. It would not be hard to spend $30K on it.
I once worked with a guy who restored 60s era Fords and resold them to people from the rust belt. He started with Arizona cars (he was in Phoenix) so they were completely rust free, then rebuilt the engine, replaced all rubber parts, replaced all missing trim… He typically spent $10,000 to sell a car for $15,000 - $20,000. A typical restoration, working on it a couple hours most nights, took him about 8 months.
