2001 ford escort stalling? - 1

My girlfriend has a 2001 ford escort 2.0 and it runs fairly well for being an older model and the item's that were replaced on this car were the oil/oil filter/air filter/pcv valve/fuel filter/factory gas cap and the hoses but the problem we have is that this was doing this before we replaced everything and it's still happening and that is the car runs normal but on day's that it's really hot in Ft Lauderdale the car runs and every once in a while it will start to choke and stall or (like it can't breath) when you give it the gas but if you turn the engine off and start it right back up it stops doing it but then few miles later it will do it again… CAN ANYONE Please Help WITH ANY IDEAS Thanks

Added (1). And I replaced the IAC valve about a year ago

Added (2). And had a code scan done and everything shows o.k.

Added (3). and spark plugs were replaced and still having issues

This thing must be setting code(s) and there's probably tech service bulletins that pertain. Or even emission related concerns.
The computer may be in a self help mode. After checking the hard faults and memory codes, erase the memory.write the codes down. Perform the pinpoint tests that are indicated. Clean the battery connections and the throttle body. If there's a throttle air bypass you may have to clean it out. Or replace it. Make sure you haven't fouled the plugs and replace as nec. Then drive it to be checked for pass codes after a complete drive cycle. The codes you read initially may contain erroneous codes set as a matter of the car being worked on or indicative of the stalling problem. Fix hard faults first

A failing or dirty idle air control (IAC) valve can cause the symptoms you describe. If the IAC valve isn't operating properly it can cause stalling and poor run characteristics because it will allow either too much or too little air past it to the point where it interferes with proper engine operation.

Given the car's age, it wouldn't be uncommon for its IAC valve to be dirty or worn out from years of use. You might want to check into it.

The muffler was hanging and the oxygen sensor cable came unplugged, could that be the issue? Or any other ideas?
