As for the gas engines, The 300 I6 was bulletproof and had a good amount of low end torque, but didn't have much to give beyond 3000 RPM. The 302 was a bit light on low end torque, but made good midrange power and has tons of aftermarket for it. The 351W has great torque and good mid-range power but was a notorious gas hog, and it's rare to find in an F-150.

The 97-03 F-150 had the modular 4.2L Essex V6 which was more powerful than the 300, but didn't have as flat of a torque curve, but it had about 50 more HP. The 2 valve 4.6L which was the replacement for the 302, it got better fuel economy and was a powerful, it's a very reliable engine overall. The 2 valve 5.4L was the replacement for the 351W, it was more fuel efficient and had a more power. Both the early 4.6L/5.4L's have a known issue with spark plug ejection, this was largely remedied with the P.I. Heads that came out in 1999.

The 04-07 models had the same 4.2L Essex V6, the same 2 valve 4.6L but the 3 valve 5.4L was introduced. It had about 40 more HP than the 2 valve 5.4L, The cam phasers are trouble spot on the 2004 models, but the issue was largely taken care of by 2005.

For the 94-97 F-250 you had the same gas engines as the F-150 only with the addition of the 460, which was noticeably more powerful than the 351W yet even thirstier.

The 1999-2004 F-250 could have a 2 valve 5.4L or a 2 valve 6.8L V10. The V10 was the replacement for the 460.

The 2005-2007 F-250 could have a more powerful 3 valve 5.4L or a very powerful 3 valve 6.8L V10. The 2005+ models are desirable as they got the 5 speed Torqueshift transmission which helped performance and fuel economy.

The best diesel in the F-250 was the 7.3L Powerstroke. Skip the 6.0L Powerstroke.
