What would be a better choice a Holden 308 V8 or a Ford 302 Cleveland V8 They are both around the same but I don't know which to get any ideas?

Then get a 350 Chevy it's easily the cheapest and most modifiable engine out there they make more performance parts for the Chevy 350 then any other engine in the world

The reason for more aftermarket parts for the Chevy 350 series engines is simple- production parts are not inspected like stock ford parts.
Actually I don't think either is the best choice!
The Ford Cleveland engine at least some years used larger main journals. This translates into more static weight and increased resistance in the main bearings.
The Windsor block has smaller journals.
Myself if I was going build a V8 it would have a Windsor block and modified Cleveland heads with aftermarket intake manifold.
