My ford 500 limited series won't pick up speed when i try to accelerate. I was told it was my air intake system?

A mechanic told me to replace the throttle body. I'm not too educated on cars but i know i would have to buy the throttle body, hose, and maybe gasket. Few questions, is the gasket important to replace as well? Besides those listed part is there something else i need to get?

First you should use a carb cleaner to clean the inside of the throttle body and throttle sensor.

Plus change air and fuel filter.
Last option if the problem persists, change fuel pump.

Your mechanic wants you to spend money on repair costs and labor plus he gets to keep the original throttle body.

Get another mechanic to check it out. Sounds to me as if the guy you saw was not too smart.

Have the OBD2 trouble codes pulled at a part store for free. Write them down. Look up the codes and possible remedies. I would not summarily replace a throttle body unless I was very sure it was damaged beyond repair. Usually they just need cleaning after a few years. Another suspect in this mishap is the intake manifold- Ford uses plastic ones and the crack and leak vacuum, but there are tests for that.
