How would I replace an aftermarket stereo with another in a Ford StreetKA (04)?

Added (1). The car came with an aftermarket stereo and the fascia already in. Is it just a matter of taking the stereo out and plugging the new in? Any help, advice and links would be greatly appreciated. I don't wish to pay Halfords £30 to do it if it's simple.

It's not unplug/plug-in.

There's most likely an aftermarket wire harness being used that connects to the factory harness providing the necessary wires to connect the aftermarket stereo.
You'll have to cut the wires between that added harness and the radio, then make the connections to the new radio.

It's not difficult if you have the ability to disassemble the dash panel and make some wire connections.

You SHOULD be able to disconnect the clip at the factory harness and also disconnect the wiring clip from the old radio and do all the wiring on a bench/table making the work much easier and faster.

If you're not going to solder/heat shrink the connections (best method but not at all mandatory) I like to use crimp caps. They are cheap, quick, and secure.
