If it's losing oil it doesn't matter if you smell it or not, it is what it is. Assuming you have been careful to check your parking spots for leaks it's probably burning it. Maybe bad engine seals. Regardless you need to be shopping around for a mechanic, not asking questions here.

You don't need an engine rebuild and you don't need a freaking quart of oil every week. Your pcv valve is f1cked and probably needs replacing.

The oil is Vaporizing and being sucked into the Intake thru the PCV system. Look inside the Intake Hose and see if it's wet from oil. It's caused by Blow By. You can install and Oil Catch Can to reduce the oil get into the intake. Very desirable if you have Direct Injection.

That's some serious oil consumption. Raise the hood and see if anything under there ISN'T all spattered with oil from a big leak. Look under the car too. Maybe your oil filter gasket blew out, letting oil leak under pressure.

Dip stick checking procedure is not done properly, or You poured the oil down the wrong hole?
If the motor was running and you shut it off and quickly pulled the dipstick, it will show nothing. Mainly because the majority of the oil is up under the valve cover and dripping down into the oilpan. I never check oil until the next morning and the car is sitting on level ground. That will be the true measure. Sometimes it is real hard to see because the oil is clear like water. You really got to look at it. I know I have to to figure out the depth using 5W20 oil.
