What's faster a mustang or a ninja 250?

What year Mustang? If it's a 1998 or older the Ninja 250 would (or should be, if ridden appropriately) be faster to 60mph. If it's 1999-2004, it would be a close race. If it's a 2005 or newer, the V6 Mustang would win and more convincingly the newer the Mustang is because they've gotten faster and more powerful in recent years.
For what it's worth a well ridden Ninja 250 should get to 60mph in about 7-7.5 seconds. Slow for a motorcycle but faster than an older V6 Mustang, not as fast as newer V6 Mustangs.
